After a long day, being tired and stressed I battled wanting to go out of my way to drive to Popeyes. In honesty, my main deterrent wasn’t health but the fact that I didn’t want to sit in traffic any longer then I had to. So I went home and made coconut breaded zucchini “fries” and chicken tenders. Yes I fried them in coconut oil, but at least it wasn’t Popeyes. Crisis averted.

Lamb and arugula and beet salad @Hayes and Kabob

Lamb and arugula and beet salad @Hayes and Kabob

Honey chicken with roasted cauliflower and curry just might be...

Honey chicken with roasted cauliflower and curry just might be my new favorite obsession. I got the recipe from my cousin and I think she got it from a cook book so if anyone is interested I’ll post it later after I find out where it came from.

The problem with food obsessions is that when I was growing up and my mom found out that my brother and I liked something she would promptly go to Costco and buy a case of it. To this day I have a tendency to eat the same food obsession till I get sick of it. (I think I made paleo chocolate chip cookies for a whole month) This dish was so good it looks like I’m gonna have a whole lotta honey chicken in the coming weeks…

Being CrossFit during Lent means a couple things to me this...

Being CrossFit during Lent means a couple things to me this year. I’ve talked to different people who use the Lenten season as a time to recommit themselves to fasting from something (sugar and caffeine seem to be reoccurring themes). Careful though, this should not mistaken for New Years Resolution 2.0. The fast is a spiritual discipline that helps us focus our hearts before God. It’s a way of clearing our distractions (even food) to set ourselves wholly dependent on God. Other religions practice this form of self deprivation for a similar purpose (Yom Kippur and Ramadan for instance).

For Christians this time is often connected to the time Jesus was in the desert 40 days before beginning his ministry. During that time he fasted to prepare and consecrate himself before God. This was not an easy 40 days as satan did what he could to tempt Jesus away from his purpose. But with scripture Jesus fought every lie with truth and made it through the fast.

Being CrossFit during Lent is a mind, body, and soul thing for me. There’s being CrossFit physically-lifting heavy things and getting stronger, better, faster- and there’s being cross fit spiritually- the giving over of ourselves to the One who, on a cross, gave himself for us first.

This year lent for me is a focus to offer my body and mind and soul to the One that loves me intimately and deeply and without reservation (oh ya there’s a Valentines post coming up!). “Love the Lord your God with all your heart and with all your soul and with all your strength.” Deuteronomy 6:5 Lent is a great time for us to recalibrate ourselves to The Lord in preparation for serving God and others.

“With all your strength…” Working out can be a spiritual act of worship. One of my favorite scriptures is Romans 12:1 “Therefore, in urge you, brothers and sisters, in view of God’s mercy, to offer your bodies as a living sacrifice, holy and pleasing to God—this is your true and proper worship”. Every Monday, Wed, and Friday I enter CFPA with the idea that I am honoring the body God blessed me with by taking care of it. I try to eat in a way that honors my body blessing as well. It has become an act of worship. This can easily become self worship (I’ll admit it, I like my glutes!) but ultimately I am trying to be a good steward of all I have been given.

“Love God with all your heart and soul…” I think I’ll save these for later posts. As we enter into the Lenten season, I’m going to spend some time adjusting my mind, body and soul to the One who saw me fit enough to die on a cross to pay for my sins. My spiritual WODs (workout of the day) will probably be in the form of waking up earlier to pray. But like good WODs I may keep it varied. 3,2,1 go…

A good Sunday for me means church, maybe lunch w friends and...

A good Sunday for me means church, maybe lunch w friends and family, a nap, laundry, some cooking for the week and if it’s a really good day a batch of cookies.

I’ve been working on my ultimate Paleo chocolate chip cookies since I started a year ago. My very first batch was the best and I haven’t been able to repeat it. My main problem is that I’m not very exact about measurements. I know I will probably frustrate many engineers, scientists and real cooks because of that. Sorry E :) I like to say I’m learning to cook with soul.

BUT tonight I paid more attention to what I was doing and I’m very happy with the outcome. I like my cookies a little chunky and fluffy. I know maybe I should call them cake at that point then. Anyhoo, this is what I did. I’m posting it so I can remember for next time :)

3 cups almond meal
1 tsp baking soda
1 tap salt
1 cup blond palm sugar
2 large eggs
1.5 tsp vanilla bourbon extract (from Trader Joes)
1/2 cup unrefined coconut oil
1 cup chunky dark chocolate chips (I prefer Sherfenberger chocolate for this). Use one cup to start and add or take away according to how chocolatey you like it.

Combine dry ingredients in one bowl. Melt coconut oil in another bowl and the add the rest of the wet ingredients to the melted oil. Mix both bowls together and add the chocolate chips. Drop a tablespoonful on a cookie sheet. Bake at 375 for 12 minutes.

Makes 2 dozen, but I have to tell my roommate I made 22 so she doesn’t ask what happened to the first 2.

Day 11 of the paleo challenge I’m doing with my cousins. ...

Day 11 of the paleo challenge I’m doing with my cousins. Being Paleo and Pilipino it was high time I make a Filipino dish. My roommate came home with a bunch of steak that was on sale and offered some to me. I immediately thought of bistek. Uncle Dan’s bistek is the best, but I’m not even trying to compete. Everything at their house tastes better, even the rice. I don’t know how but it does.

I pulled out a Filipino cookbook my mom bought me. “Your cousins’ French Canadian husband cooks from this. You should be able to do the same”. Thanks?

I looked up the recipe and saw a few problems: the marinade called for sugar and corn starch and the onions were cooked in canola oil. I altered the recipe as follows:

I squeezed out about 2 tablespoons of lemon juice. Added 4 tablespoons of tamari gluten free soy sauce, and added a little salt. I also added about 4 more tablespoons of water. Then I poured the marinade over 4 thinly sliced cuts of beef flank and let it sit in the fridge for 20 minutes (the recipe said a half hour but I was starving!).

Then I cooked down sweet Maui onion rings in a tablespoon of coconut oil. I used one whole medium sized onion. I set aside the onions after they were cooked.

In a high heat frying pan I cooked the meat with a little marinade. Once the meat was cooked through in about 3 minutes I added the onions back and the rest of the marinade and let the marinade cook down on high for 10 minutes.

This dish is usually served over rice to help soak up the sauce but I opted for a side of broccolini instead. Not as good as Uncle Dan’s but my roomie gave it the thumbs up.

Too hungry to wait for turkey meatloaf to cook, I made them into...

Too hungry to wait for turkey meatloaf to cook, I made them into meatballs. I roughly used the recipe for turkey meatloaf from the Paleo Comfort Foods book. I ended up cooking the 1 inch meatballs for 20 minutes at 375.

It’s only 3 days in but I find myself hungry ALL THE TIME so I’m having to cook meals that are quick and keep snacks in a gun holster. I didn’t think I had fallen off the wagon that far, but this month is proving otherwise,

Happy New Year plus a day! This year for Christmas I received lots of fun goodies to jump on my paleo-nessness I can’t wait to make some zucchini noodles and burn some recipes with all this loot! Anyone have ideas for my fancy salt?

I fell asleep at 11pm on New Year’s Eve after having just flown back to the Bay. And let’s face it, staying up past midnight just doesn’t sound good to this recovering night owl. Woke up New Years day bright eyed and ready for CFPA’s New Year’s Murph WOD.

1 mile run
100 pull-ups
200 push ups
300 squats
1 mile run

I finished in 61:27 which is pretty dang slow, but it was nice of the other athletes to run back half a mile to cheer us slow folks to the finish. That’s community right thur! On a positive note: I used a lighter band on my pull-ups AND I did straight “boy” push-ups compared to last May! Better..,better…

This month I’m not doing a Whole30…but I will be eating clean all month. I’m
going 99% Paleo this month. Why not 100? I decided to allow for the heavy cream in my coffee as a way of self love (I know I excuses excuses). Plus it keeps me from having sugar. But I will be minimizing processed food, eating more veggie, meats and seafood, nuts and fruits. I stocked up at Whole Foods last night and now I’m ready to do dis thang son! (Sorry I get a little hood sometimes when I’m pumped up)

3…2…1…go!

Homemade chicken stock ready forum next soup! I just about fell over though when I saw her drink “Go Go Juice”. From what I can tell its part Mountain Dew and part Red Bull. It’s supposed to give her energy to perform better. Oh Honey Boo Boo…my drink tastes like apple juice too, but it actually has apple in it. I tried juicing for the first time this month as there are times I don’t get in enough veggies. Celery, kale, spinach, and honey crisp apple. PaleoPilipino’s GoGo juice. Makes ya wanna holla!

submitted by travis-vs-world

Yup, happy 1 year Crossfit Palo Alto anniversary to me! It’s been a great year of health and I am grateful to feel better and stronger today because of it. Thanks T, T, and G for a great year!

Here are some things I’ve discovered about myself in the past year:

1. I can do more than I thought I could

2. Celebrating a PR is important and a good lesson for everyday life

3. Eating well is essential to living well (I can’t say this without being cliche, but it’s true)

4. I love smiling to myself after lifting more than I expected to

5. Olympic lifting is not as scary as it looks

6. I love having reachable goals in front of me (unassisted pull-ups are up next)

7. knee high socks make me feel stronger for some reason

8. I actually like vegetables now

9. Practicing disciplines for the mind, body and soul have opened up my world

10. I love wearing size Small clothes again.

11. I like myself in the mirror more

12. I have more confidence (see #10 and #11)

13. I can live without sugar in my coffee (this was a surprise, believe me)

14. A good coach and supportive peeps can keep you in the game for longer

15. I’ve never regretted a workout…even when I was hating getting there

16. I can try new workouts and not get intimated (Fight for air climb, Krav Maga and bag classes)

17. Eating Paleo wasn’t a fad for me
